Method
In a large bowl, combine the flour and salt. Make a well in the centre and add the yeast, dissolved in a small coffee cup of lukewarm water. Mix gently, then begin adding the butter (very hot, as hot as can be handled) and the milk alternately. Knead, adding as much warm water as needed, until a soft, elastic dough forms. Cover and allow the dough to rise again.
Take a small ball of dough and roll it out into a rectangular piece approximately 12 × 15 cm, keeping the base slightly thicker.
Spread a small amount of the filling evenly over the surface. Fold the dough in from all sides to enclose the filling, pressing the edges firmly with a fork to seal well, without completely covering the cheese inside.
Brush the surface with the egg yolks and sprinkle with sesame seeds and cinnamon. Place the pies on a buttered baking tray lined with parchment paper. Bake in a preheated oven at 250°C until golden.
